General Description
Calamus root is derived from the Calamus plant, also known as Acore Odorant or Acorus calamus. This plant originated in Europe and the root itself produces a flavour that is quite similar to ginger, with some lemon undertones.
Use Cases
In the liquor industry Calamus root is primarily used as an additional flavouring for different types of liqueurs due to the unique flavours it produces.
Calamus has also been used in scented beauty products and potpourri.
Calamus has been and still is used in medicines to treat gastrointestinal problems such as ulcers and inflammation.

Though Calamus is still widely used, it is banned in certain countries for food use due to safety concerns regarding its toxicity. Calamus is however still legal in some countries for use in foods as long as beta asarone is kept beneath a certain level.
§ Storage
Keep packet sealed/closed tightly after opening, keep in a cool, dry place and away from pests.
§ Shelf life
These are dried ingredients and should not spoil in any reasonable time frame provided storage conditions are met, however some flavour and viability may be lost over long periods (Several months) of storage.
