General Description
Peated Malt is a form of Malted barley that is commonly used as a specialty grain to enhance the Aromatic qualities of a brew by imparting a strong, sweet, peated-smoke flavour in the brew. Specialty malts usually make up around 25% or less of the total grainbill whilst the rest is made up of Base malt for fermentable sugar.
Characteristics
Peated malt is used as an aromatic malt either to impart a sweet, peated-smoke flavour in whiskey or to introduce these flavours in beer by using small quantities of it.
Additional information (If applicable)
Aromatic malt contains much more pungent characters than base malts and thus do not make for a good fermentation base, these are to be used as additions for flavour, not to be used as a base as the aromatic character will overpower the beer.
