A strain of Saccharomyces known for its accentuated fruit aroma and flavour. Due to the release of polysaccharides into the must during fermentation, this yeast contributes to a round, soft palate with good pleasant citrus and floral notes. Works well with apples, plums, pears or fruits that produce a white wine profile. When left on lees, spicy tropical and citrus notes develop.
