General Description
A packet of white/off-white powder that improves the body texture (smooth and creamy mouthfeel) of yoghurt, it also increases firmness (viscosity) and better prevents separation of the whey (syneresis).
Replaces milk solids nonfat.
Quantity and Makes:
100g packet
Use 20g per litre of milk.
Directions:
Add before heat treating your milk.
Storage:
Store in a cool, dry place.
Reseal packet after opening.
