General Description
A perennial, herbaceous plant in the Mint family, Lemon Balm is Native to South-Central Europe, the Mediterranean basin, Iran and Central Asia, but has also naturalised elsewhere. Lemon balm has a bright, citrusy taste that brings together the acidity of lemon with subtle hints of mint.
Use Cases
Lemon balm is the main ingredient in Carmelite water, which is sold in Germain pharmacies as an alternative medicine and is proposed to be a sleep and digestive aid.
Lemon balm is also used as a flavouring in ice cream with other additions and is also an ingredient in peppermint tea.

§ Storage
Keep packet sealed/closed tightly after opening, keep in a cool, dry place and away from pests.
§ Shelf life
These are dried ingredients and should not spoil in any reasonable time frame provided storage conditions are met, however some flavour and viability may be lost over long periods (Several months) of storage.
