General Description
Calcium Sulfate as sold by us is a fine, white or off-white powder that is commonly used to raise pH in products, adding some alkalinity as well as some permanent hardness to the product.

Uses:
Calcium Sulfate is commonly used to raise the pH of darker beers especially, which typically have a lower pH by default due to the addition of roasted malt.
Calcium sulfate is a food additive used as an anti-caking agent, dough conditioner and strengthener, flour treatment agent, pH regulator, thickener and yeast food. It is a white or white-yellow fine odourless powder. Due to its high calcium content (16-20%), calcium sulfate can also be used in flour fortification.

Alternatively it is good practice to add around 5 – 15g of calcium carbonate for a 23L batch of dark beer if you prefer not to use calcium carbonate.
1g per 10 litres adds 23 ppm Ca++ (Calcium ion), 56 ppm S04(Sulfate ion).
