Mash with 11.6 litres liquor. Single step infusion mash at 65°C for 60 minutes. Sparge at 76°C until 27 litres of wort is collected. Boil for 75 minutes and add the first packet of hops at the start of the boil, the second packet for the last 10 minutes of the boil and the third packet at turn off. Ferment at 12°C for 21 days, bottle with 7.4 g dextrose per litre and condition for four weeks at 3°C.
