This strain of Saccharomyces Cerevisiae is a top fermenting yeast strain that produces fruity and phenolic characters. When fermented below 20°C clove aromatic notes are dominant, while fermentation above 22°C produces banana dominant aroma notes.Very low flocculation capacity makes this a very popular yeast to be used in all types of wheat base beers.
