Epsom salt is a brewing salt that is commonly used to give permanent hardness to the wort by adjusting its chemical properties, adjusting the ion content, enhancing enzyme action and ever so slightly lowering the pH of the brew.
Epsom salt is also found in foods such as flour, cheese and confectionary. As a food additive, it's used to enhance the firmness of canned vegetables

1g per 10 litres adds 10 ppm Mg++ (Magnesium ion), 39 ppm S04--(Sulfate ion).
