A fine, white or off-white powder that is a common wine or must additive, in which it forms sulphur dioxide gas.
Sodium Metabisulfite, through the forming of the sulphur dioxide gas, prevents most wild micro-organisms from growing, and acts as a potent antioxidant, protecting both the colour and delicate flavours of wine.
Add between 1 – 3 grams of sodium metabisulfite per 20 litres to kill off any wild yeast.
Keep in a cool, dry place.
