Irish Moss is a packet of dried, seaweed flakes that are commonly used to reduce sedimentation in beer by adding it in the last 15 minutes of the boil.

Irish moss reduces sedimentation by accelerating protein coagulation during the last bit of the boil, this allows the free floating proteins to stick together, become heavy and sink to the bottom of the boiling vessel.

 

The extract within Irish moss that makes all this happen is called carrageenan, which is a gelatine-like substance that naturally forms in Irish moss.

 

Use Instructions:

 

Use around one teaspoon of Irish Moss per 20 litres and let it boil for around 15 minutes before switching off the heat and cooling the wort.
